Transactions sent from wallets enter mempool where they await to be signed into a new block. A new block is being mined every 2 minutes on average and its creation is visible on the graphs as rapid drop in the mempool size.
Each transaction has a fee, which depends on the priority of the transaction set by its sender. The fee is an incentive for miners to include transactions in freshly mined blocks. The miner who does it, gets the fees.
